It’s winter here in Muskoka — it has been for the past 3 weeks! Hummus is a staple in my family.. however sometimes I am bored of the classic garlic or plain hummus. I always crave fresh flavour in the winter (as we all do!). Adding fresh herbs and lemon is a great way to freshen up a dish. This lemon dill hummus is refreshing and full of protein! Cut up some veggies (my favourite is raw beets!) and get dipping!
Lemon Dill Hummus
Ingredients:
1 15oz can chickpeas
1 tsp salt, or to taste
2 garlic cloves
1/3 cup tahini
8 tbsp freshly squeezed lemon juice
2 Tbsp water (more if too thick)
2 tbsp chopped fresh dill
Olive oil, for drizzling
Optional: 1/2 tsp cayenne for some kick!
Directions:
1. Add all ingredients to food processor and blend! Add more water if too thick.
2. Top with cayenne for a bit of spice!
